My grandfather once said, 'when you stop learning you die'. I do believe he meant that metaphorically (in 1986, at 82 he was learning BASIC computer programing)...from UVa Aerospacing engineering; formal Chefs' training in Switzerland to opening Belmont Butchery, a small artisan butcher shop in 2006. The last 18 years, Tanya has honed her craft in whole animal butchery & European inspired charcuterie in Richmond, Va.
